The Kitchen Knight II is a pre-engineered wet-chemical system. When the detection line senses a fire on the cookline, it releases a wet agent through nozzles aimed at each appliance, the plenum, and the duct. The agent knocks down the flame and forms a soapy seal over the hot grease so it cannot reignite, then shuts off the gas or electric to the appliances. That is exactly what UL 300 demands of a modern kitchen system.
